2020-11-12 14:36
The use of spices and fragrances is welcomed by users of different flavors and products, which is closely related to the aroma of the product. Its development has not only promoted the development of synthetic spices and natural spices, but also promoted the development of all flavoring products industries. Of course, the development of new varieties of synthetic spices and natural spices has also promoted the design of new flavor types, and the development of flavoring products industry has provided a broader market for flavor. In essence, essence is the spice industry leader.

1. flavor composition

Flavors are made up of at least several flavoring materials, or even dozens of natural and synthetic fragrances, or organic compounds.

The dispensing of flavors can be made up as follows: (1) the fragrance base - the main body showing the flavor characteristics; (2) the flavoring agent - the ingredients to blend the aroma of various components; (3) the modifier - the ingredients that make flavors change; 4. The definite flavor type itself is not easy to volatilize, and can inhibit the volatilization of other volatile spices, and slow down its volatilization. ⑤ Diluent -- appropriately dilute the fragrance and dissolve and dilute the crystalline perfume and resinous balm. It should be odorless, stable, safe and cheap.

The key to play a good role in flavoring products is the regulation of volatilization, and how to achieve the balance and coordination between head aroma, body fragrance and bottom fragrance. Head volatiles, which are highly volatile, are important factors that determine the "image" and "freshness" of flavor. Body fragrance - the essence flavour is given to the essence, and the volatile flavor is moderate. It is also the main flavor of the essence. The bottom aroma is small, and its molecular structure is relatively large and complex, which makes the fragrance retain its fragrance for a long time.

3. flavor type -- flavor type

About 17% of condiments are applied, and 7% of other applications, such as flavors prepared by microencapsulation, are stable and volatile.
